- Check the boards. “The plan — what the room owes” says how many pounds of each cut
and by when; “On hand — Fishbowl” and “On the way — open POs” say what's in stock and what's coming.

- Tap the right card — organic vs conventional matters. Green cards are organic
(I-D-093, I-R-02), tan cards conventional (I-R-21, I-R-17). The wrong card puts the wrong stock code on
the tote.

- Pick the raw material's Fishbowl lot — or type it if the list can't load.

- Pick the CUT. Small dice and large dice are different Fishbowl parts — the tote
label carries the one you pick.

- “Whole lbs loaded” — worth the ten seconds. It's optional, but it is the only way
the room's yield (peel and trim loss) can ever be counted.

- “Qty in this tote (lbs)” — the hand-weighed number that goes on the label.

- Pick your printer and tap “🖨 Print tote label.” One label per tote, on the tote.
The label carries the stock code, today's date (automatic), the lot and your quantity.
The lot does not change when you dice — 4900-1 goes in, 4900-1 comes out; it is the stock code that
changes. Use-by is dice date + 5 days, or the lot's own expiry if that is sooner.

Three rules that matter · Tres reglas
- One label per tote — a tote without its own label is a tote Horizon can't trace.

- The cut on the label is the part Fishbowl consumes — picking the wrong cut mis-counts two inventories.

- A stale lot on the “On hand” board is the scrap-me pile — tell your lead, don't dice from it.
